Christmas recipes and a giveaway!

I am following along with Aly and Molly's 12 Day's of Christmas. Today's topic is Christmas recipes! Also, if you don't care to read the recipe part of this post scroll to the bottom for a special announcement!

Christmas recipes! Making Christmas cookies is one of my favorite holiday activities. I usually make way too many and then end up bringing them to work or to a holiday party, so it all works out. I just saw this recipe in the newspaper and had to try it out because it combines two of my favorite flavors... chocolate and coconut. YUM! I can’t wait to get some new ideas from all of you too!

Chocolate Macaroons

4 oz semi-sweet chocolate
2 oz. unsweetened chocolate
2 large egg whites
½ cup sugar
1 tsp. vanilla
2 cups shredded unsweetened coconut

1. Preheat oven to 375 degrees. Line (I like to use wax paper rather than greasing pans during the holidays, it just makes the cleanup so much easier) two cookie sheets. Melt both chocolates in the top of a double boiler placed over shimmering water, let cool until just warm.
2. Beat egg whites until frothy, about 30 seconds on medium-high speed. Gradually add sugar and continuing beating until the mixture is the consistency of marshmallow spread, about 30 seconds.
3. Blend in the vanilla, fold in the melted chocolate, and then the coconut.
4. Drop rounded tablespoons of the dough about 11/2 inches apart onto the cookie sheets. Bake for 12 minutes or until the cookies form a light crust. Cool on the cookie sheet or a wire cooling rack!.
5. EAT... or try to resist!
